If you are looking for a last minute healthy option for your Super Bowl party spread, look no further! Mix up this versatile dip in just minutes to give your guests a healthy but tasty treat.

2 c. ricotta or cottage cheese
1/4 c blue cheese crumbles
2 T green onion or 2 t dried onion
1/2 t black pepper
1 T hot sauce
1/2 t cayenne
milk

Blend all ingredients except milk until smooth. Add milk to thin to desired consistency. Garnish with chopped green onions and a dash of cayenne for color.

Serve with cut up veggies. 
Cucumbers, red peppers, celery and carrots are my favorites. It also makes a great chip dip. I like to pair it with salt and pepper kettle chips. 


You can also serve this with your wings instead of blue cheese dressing. It makes a great sandwich spread too.


This recipe works best with an immersion blender but you could use a mini food chopper or full size blender too. 

Other options: 
*use feta cheese with some chopped kalamata olives
*try a sweet version with ricotta, orange juice and honey
*add chopped nuts
I used Grande Dolce Ricotta and gorgonzola
