Cook for one minute, making sure not to burn the garlic.</span></li><li><span style="font-family: verdana;">Add the curry paste, stirring constantly until fragrant. Add brown sugar.</span></li><li><span style="font-family: verdana;">Stir in the chicken broth while scrapping the bottom of pan.</span></li><li><span style="font-family: verdana;">Add butternut squash. Stir and season with salt to taste. </span></li><li><span style="font-family: verdana;">Bring to a boil over medium-high heat. Reduce heat, cover and simmer, stirring occasionally, until butternut squash is cooked through, about 15-20 minutes. </span></li><li><span style="font-family: verdana;">Remove from heat and immediately stir in 2/3 cup coconut milk</span><span style="font-family: verdana;"> and lime juice. You want an equal balance between the 🫑🥔🍅 so you might need to adjust the recipe accordingly. </span></div><div><span style="font-family: verdana;"><br /></span></div><h3 style="text-align: left;"><b><span style="font-family: verdana;">Roast the Peppers</span></b></h3><div><span style="font-family: verdana;">Roast peppers over gas stove or grill until charred on all sides. Remove and place in a large bowl. Cover with plastic wrap and set aside. Once cool enough to handle, remove charred skin and chop peppers into quarter-sized pieces. This can be done the day before. </span></div><div><span style="font-family: verdana;"><br /></span></div><div><span style="font-family: verdana;">You can substitute jarred roasted peppers, but be sure to drain them well. </span></div><div><span style="font-family: verdana;"><br /></span></div><h3 style="text-align: left;"><span style="font-family: verdana;"><b>Cook the Potatoes</b> </span></h3><div><span style="font-family: verdana;">Cook potatoes in salted water until tender. Remove and set aside. Once potatoes are cool enough to handle, peel and chop into large chunks. </span></div><div><span style="font-family: verdana;"><br /></span></div><h3 style="text-align: left;"><span style="font-family: verdana;"><b>Prepare the Potato Salad</b> </span></h3><div><span style="font-family: verdana;">Combine potatoes and roasted peppers in large bowl. Drizzle with olive oil. Stir to combine. Fold in coarsely chopped tomatoes and torn basil. Add s+p and additional olive oil to taste. And we learned about their impressive story - what started as a fruit farm in the early 1900s has evolved into 175+ acres of grapes that produce more than 85,000 gallons of wine per year. This past year, it really punched us in the gut. My Mom was diagnosed with cholangiocarcinoma. What? You've never heard of it? Neither did we. Bile duct cancer is extremely rare - affecting less than 20,000 people each year. It's a very aggressive cancer with survival rates similar to the more common pancreatic cancer. 16% in five years.</span></div><div><span style="font-family: verdana;"><br /></span></div><span style="font-family: verdana;"><h2 style="text-align: left;"><span style="font-family: verdana;">My Mom's Battle With Cancer</span></h2></span><div><span style="font-family: verdana;">My Mom thankfully qualified for Whipple surgery. Her team at </span><span style="font-family: verdana;">UH Seidman Cancer Center was amazing, both incredibly talented and extremely kind and caring.</span></div><div><span style="font-family: verdana;"><br /></span></div><div><span style="font-family: verdana;">This extensive surgery removed not only the cancerous bile duct, but also more than a third of her stomach, the gallbladder, and part of the pancreas and intestines. Seventeen lymph nodes were also removed - one contained cancerous cells. Her surgery was an astonishing success, but now we have to wait to see if it and the chemo works to make her cancer free.</span></div><div><span style="font-family: verdana;"><br /></span></div><div><span style="font-family: verdana;">We were extremely lucky because UH allowed one visitor in spite of the COVID-19 pandemic. I was thankfully able to be with her throughout her surgery and visit her in rehab. Throughout the pandemic we were very careful and generally only went out for essentials or to outdoor spaces. But after her cancer diagnosis we were extra vigilant. Because of her impaired immune system, we didn't dine inside restaurants, but we still tried to support them as much as possible through ordering take out.</span></div><h2 style="text-align: left;"><span style="font-family: verdana;">Impact of the Pandemic On the Restaurant Industry</span></h2><div><span style="font-family: verdana;">As you know, our restaurants were affected by COVID more than most other businesses. You can't eat and drink with a mask on, so many people like us didn't feel safe dining indoors. This broke my heart because not only am I an advocate for local restaurants and businesses, but many of the owners, chefs, servers and bartenders are friends. Well Stoup is a soup that's not quite a stew. A thicker broth-based soup that is hearty and belly-filling. Beat on medium-high until light, fluffy and doubled in volume, approximately 2 or 3 minutes. Place the cookies at least 3 inches apart on the cookie sheets. <span style="font-family: "verdana" , sans-serif;">3. <b>Purchase gift cards.</b> Even if an establishment is currently closed, you can stock up on gift cards for future purchases. This is especially true of your hair salon, yoga studio, museums, or art classes. <i>But I recommend doing so wisely </i>- some businesses will unfortunately not make it through this crisis and you could be out of pocket. Make sure you are ok with this so you aren't disappointed later.</span></div>

<span style="font-family: "verdana" , sans-serif;">4. <b>Purchase merchandise.</b> This is a great time to buy a shirt from a local shop or a growler from your favorite brewery or other establishment. Download the <a href="https://hungernetwork.org/">Hunger Network</a> app and help with food rescue. Shop for an elderly family member or neighbor. Offer to take care of the pets of someone who is still going to work. </span></div>

If you planned an event that is unable to be held, postpone it instead of canceling. <u>If your company or organization has asked restaurants and businesses to donate to your fundraisers, it is your time to return the favor.</u> Help those who have helped you all these years.</span></div>

Also it's a nice variety for a cookie tray. If you want to include more people, you can always decrease the amount of cookies for each person to six instead of 12. Or bake a lot more cookies. :)</span></div>

I wanted the lemon flavor to pop so I added three types of lemon flavorings for a flavorful yet balanced cookie. Four if you include the lemon vodka that the dried cherries are soaked in to plump them up. Pistachios and cherries are decadent additions and the color combo is perfect for the holidays.
