Beer Week Breakfast

In honor of the upcoming BEER WEEK...

Since beer lovers cannot live on beer alone, though they may try, here's a little something for the morning after....

I was inspired by an article in the August 2011 Rachel Ray magazine:
"If you like your flapjacks on the puffy side, sub your favorite lager for the liquid called for in the recipe. You’ll be amazed at how light and airy they turn out—and how the flavor gets kicked up a notch!"

Any brew will do. Keep it light and mild if you just want the lighter texture.

If you want to be more adventurous, I'm thinking the perfect choice would be Breakfast Stout by Founders for a luscious chocolate stout pancake. And who can resist the adorable label? I might even add some sliced bananas on top. Yum!

Beer Week Pancakes

1 c. all-purpose flour
1/4 cup white sugar
3/4 t. baking powder
1/2 t. salt
1 egg, beaten
1 c. beer of your choice
Mix ins (berries, bananas, nuts, coconut, chocolate chips)
2 tablespoons butter, melted

In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the egg, beer and melted butter. Whisk just until blended - there should be some lumps in the batter.

Heat a skillet or griddle over medium heat. Coat pan with a bit of butter or oil. Spoon about 1/4 cup of batter onto the hot surface for each pancake. Sprinkle some of your mix-ins on each pancake - making sure they are evenly dispersed.

When bubbles appear on top of the pancakes, flip, and cook until browned on the other side.

Serve with real maple syrup.
