After a cold spring, summer is finally here. And it sure came in with a bang! These 90+ degree days and humidity at least have been brutal. I've been trying to avoid cooking - haven't you? So last night I mixed up some overnight oats and they turned out so good I just had to share. And guess what? They are PERFECT for the upcoming July 4th weekend thanks to the pretty red, white and blue toppings.
Matcha Overnight Oats
1 cup rolled oats
1 cup milk of choice
1 cup plain Greek yogurt
2 t. matcha powder
2 t. honey, agave or maple syrup
1 t. vanilla
Dash of salt
2 T. chia seeds
2 T. hemp seeds
Toppings
10 fresh strawberries, diced
1 cup fresh blueberries
1/8 c. shredded coconut
1/8 c. chopped walnuts
Instructions
In a large bowl, whisk together milk, yogurt, matcha powder, sweetener, vanilla, and salt until smooth. Make sure there aren't any lumps of matcha. Then mix in the oats, hemp seeds and chia seeds. Pour into mason jars, or other containers with lids and refrigerate overnight.
When you're ready to eat, stir the mixture and add extra milk to adjust the consistency if needed.
Top with strawberries, blueberrries, shredded coconut, and nuts. You can add a dusting of matcha powder or cinnamon or if you want to make this a dessert, add mini chocolate chips. Serve chilled and enjoy!
